What is Matcha?

Matcha is a type of Japanese green tea. And unlike teas you might be familiar with that you get from tea bags or loose leaves, this unique type is finely ground, powdered green tea.The name is quite fitting since Matcha in Japanese means powder, so the meaning of Matcha green tea is literally powdered green tea.

How Matcha is made

Shade Growing

To grow the leaves that will later become Matcha, layer of shape are added to the fields a month before cultivation, eventually blocking 90% of the sunlight.

Hand picked harvest

AIYA holds 1300 units of granite stone grinders, which are maintained by in-house skilled artisans. The grinding process is conducted in a clean room.

Refining: Meat of the leaves

After cultivation, the stems, veins, and unwanted particles are removed, leaving only the purest flesh of the leaves. The leaves are now called Tencha.

Green Tea Crepe Cake

Ingredients for Batter:




  • ¼ cup 1 Tbsp butter, melted

  • 3 cups warm milk

  • 6 large eggs

  • 1 ½ cups + 1 Tbsp all-purpose flour
  • 3 Tbsp green tea (matcha) powder

  • 1 pinch salt

  • ½ cup sugar



Ingredients for Filling:



  • 1 Tbsp powdered gelatin

  • 4 Tbsp ice cold water

  • 3 cups heavy cream

  • ½ cup powdered sugar

  • 2 Tbsp green tea powder
